A lot of you asked about my nutrition during recovery so I wanted to share this week’s meal prep with you! 🥦 It’s a one dish meal and so easy to make as a dinner, too. I’ve been trying to eliminate most dairy and gluten for the time being to help with inflammation... but cheese has been the hardest thing to limit 😂 Ingredients: 1 package fresh andouille sausage, sliced 1 cup green fresh beans, halved 2 cups bell peppers of choice-green, yellow, red, or orange, chopped 2 cups grape tomatoes 1 cup whole bella mushrooms, quartered Olive oil Italian herbs Optional: mix it up by adding different veggies each time: squash, zucchini, Brussels sprouts, asparagus, cauliflower, broccoli, potatoes, etc. Directions: Preheat oven to 400 degrees. Coat veggies in olive oil on a sheet pan (I use a sprays). Sprinkle with herbs. Bake for 20 minutes.
